Pork Adobo from Pig and Khao at Madison Square Eats

I love a good pun.  I also love good food.  So, on my second trip to this season’s pop-up food market near Madison Square Park I had to hit up Pig and Khao.  Owned by “Top Chef” contestant Leah Cohen, Pig and Khao fuses Southeast Asian influences from Thailand and the Philippines, offering a variety of traditional dishes served in a modern way.  For dinner last night, I chose the pork belly adobo served over rice with a slow poached egg.  The pork belly is cooked in a thick adobo sauce, which consists of soy sauce, vinegar, and peppercorns among other things.  The rice balances out the garlicky saltiness of the adobo and the poached egg rounds out the flavors.  This dish evokes such nostalgia for this Filipino-American self-proclaimed foodie, and I highly recommend trying it if you find yourself in Madison Square Eats this month or in the Lower East Side where the brick and mortar restaurant is located.  This place is definitely worth the trek.
