What to Do With Old Bananas? (Make Banana Walnut Muffins)

I hate mushy bananas.  They are the bane of my existence.  I usually buy a bunch every week to bring to work as a snack; but by the end of the week I’m always left with one or two that have just lost all their lust for life.  So what to do with these sad little squishy fruits?  Make banana walnut muffins!

This recipe will make 30 muffins so I hope you really love banana walnut muffins or that you have a lot of friends you can share with.

  • 1 2/3 cups of milk
  • ½ cup vegetable oil
  • 3 ripe mashed bananas
  • 2 eggs
  • 2 teaspoons vanilla
  • 4 cups all purpose flour
  • 1 1/3 cup sugar
  • 5 teaspoons baking powder
  • 1 teaspoon salt
  • ½ teaspoon nutmeg
  • 1 ½ cup roughly chopped walnuts

Preheat oven to 400 degrees.  Line 30 muffin tins.   In a large bowl mix the flour, sugar, baking powder, salt, and nutmeg.  In another bowl, beat milk, vegetable oil, bananas, eggs, and vanilla.  Make a small well in the center of the flour mixture and pour the wet ingredients into the center.  Stir until combined but still lumpy.   Gently fold in walnuts.  Make sure not to over mix or the muffins will become dense.  Divide evenly into lined muffin tin.  Bake 18 to 20 minutes or until golden brown.
